It just wouldn’t be Christmas without delicious cookies and heaven knows that chocolate and mint are a match made in heaven!
These cookies are so simple to make because they start with a cake mix!

Mint Chocolate Thumbprint Cookies

Chocolate and mint are the perfect combo for these cookies!

Ingredients

  • 1 (15.25 oz) Devil's Food cake mix
  • 1/2 cup vegetable oil
  • 2 eggs
  • 30 thin mint patties, unwrapped
  • 1 cup white chocolate chips

Instructions

  1. Preheat oven to 350 degrees.
  2. Mix cake mix, oil, and eggs together. Drop spoonfuls of dough onto baking sheet.
  3. Bake for 6-9 minutes (do not overbake).
  4. Take sheet out of oven and while the cookies are still very hot, place a thin mint patty on top of each cookie. Let cookies cool, then melt chocolate chips in microwave and drizzle on top of each cookie.

  1. I made some mint jelly this summer from my homegrown mint only to realize that I really don't know how to use it up. We never eat lamb so that's out. I had thought of making chocolate shortbread cookies and filling the center with a spoonful of jelly. Wasn't sure if it would be good so haven't tried it yet. But this recipe inspires me. Perhaps I can substitute the jelly for a mint patty.
