Loaded Broccoli Casserole

This Loaded Broccoli Casserole is so quick to make, tastes amazing, and the best part is… it’s really healthy. It has a lot of good and healthy ingredients in it that will keep you full, and keep you healthy. It’s a perfect meal for a busy night, and you probably already have a lot of the ingredients!

Ingredients

  • 2 bunches broccoli florets (about 3 cups chopped broccoli).
  • 1/4 red onion finely chopped
  • 1 cup mushrooms
  • about 6 strips turkey bacon
  • 1 1/2 cup plain Greek yogurt
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 teaspoon garlic salt
  • 1 1/2 cup marbled cheese shredded
  • Topping:
  • 1 sleeve Ritz crackers, crushed
  • 2 tablespoons butter, melted

Instructions

  1. Preheat oven to 350 degrees
  2. Steam the Broccoli until soft (I used a Zip and Seal plastic bag that steams it in the microwave).
  3. Cook the Turkey Bacon according to package, and until it is crisp enough where you can tear it up and it holds its shape.
  4. Turn the stove-top to medium high heat, and broil the mushrooms in the vegetable oil until they are soft and begin to darken.
  5. In a medium-large sized bowl, mix the broccoli, onions, mushrooms, turkey bacon pieces, and Greek yogurt until well combined.
  6. Add the salt, pepper, and garlic salt and mix in well.
  7. Spread the mixture into the 9x9 inch pan.
  8. Sprinkle the cheese on top until the green broccoli is almost completely covered.
  9. In a separate bowl, combine the crushed Ritz crackers, and melted butter until it makes a soft mixture.
  10. Sprinkle the Ritz cracker mixture over the cheese.
  11. Bake in the oven at 350 degrees for 15-20 minutes or until the cheese is melted.
  12. Serve warm 🙂

  1. My family enjoyed this twist on broccoli. The first time I made it I followed the recipe and it was too salty. The second time I made it I omitted the salt and it was perfect. The Ritz crackers are salty enough. Instead of 1 1/2 cups greek yogurt I just used one 5-6 oz container and it was enough. In step #10 of the directions you said to "sprinkle the graham cracker mixture" but I know you meant the Ritz cracker mixture. Thanks for sharing. I'm glad I found this recipe.
