Mushroom Asparagus Chicken Stir Fry

I am all for easy and delicious dinners. This one just takes a couple of minutes and tastes amazing! And the best part is, it’s healthy. You can also cook in your other favorite vegetables like carrots, peas, broccoli, or water chestnuts.

Ingredients

  • 3 boneless skinless chicken breasts cut into bite size pieces
  • 2 asparagus bundles
  • 3/4 cup mushrooms
  • 2 tablespoons lemon juice
  • 2 tablespoons olive oil
  • 1/2 cup chicken broth
  • 1 teaspoon lemon pepper
  • dash fresh cracked pepper

Instructions

  1. Heat stove to medium-high heat.
  2. Cut asparagus into 2" pieces and place in a pan or skillet.
  3. Chop mushrooms and place in skillet with asparagus.
  4. Saute in 1 tablespoon of olive oil until asparagus goes soft.
  5. Set aside, and keep warm.
  6. In a different skillet (with more depth) combine diced chicken chunks, chicken broth, 1 tablespoon olive oil, lemon juice, and lemon pepper.
  7. Cook until the chicken is cooked all the way through and there is no pink, and the juices are almost all absorbed.
  8. Scoop the vegetables into the pan with the chicken.
  9. Cook until the chicken is a golden brown, and everything is heated through.
  10. Add a dash of fresh cracked pepper.
  11. Enjoy!
