Sliced Baked Potatoes

┬áIf you love baked potatoes as much as we do, then this is the recipe for you! There is so much flavor in these potatoes, you almost don’t even need to put toppings on them! The slices in the potatoes allow the butter and garlic flavors to actually stick to the potatoes. Every bite is packed with the most delicious flavor! We will never have regular baked potatoes again!

Ingredients

  • 4-6 Russett Potatoes
  • 1/2 cup butter
  • 1 clove minced garlic
  • 8 ounces cheddar cheese, sliced
  • 1 cup sour cream
  • 4 green onions, chopped
  • 4-6 slices of cooked bacon, chopped or crumbled
  • Salt and Pepper to taste

Instructions

  1. Preheat oven to 400 degrees.
  2. Cover cookie sheet with aluminum foil.
  3. Slice potatoes about 1/8 inch, without cutting all the way through to the bottom, creating a fan effect. Place potatoes on cookie sheet.
  4. Carefully place sliced butter in between a few of the slices.
  5. Rub minced garlic on top of potatoes or in between the slices.
  6. Top with salt and pepper.
  7. Bake at 400 degrees for one hour, or until potato is fully cooked.
  8. Take out potatoes and place one inch slices of cheese in between the slices of potatoes.
  9. Place back in oven for 5 minutes.
  10. After cheese is melted, take potatoes out of oven and let them cool for at least 10 minutes, to avoid sour cream melting.
  11. Top with sour cream, chopped green onions, and bacon.Serve warm and enjoy!

  1. I am no chef, but when I made these for my extended family, I LOOKED LIKE A CHEF! They turned out delish and very elegant looking! They may be more work at the get go, but they are already toddler friendly right out of the oven! A new favorite!
