Although we post a lot of delicious treats we all try to eat healthier. This Sweet Potato Shepherd’s Pie is easy to make and it is one of the healthier dishes! With veggies, ground turkey, and sweet potatoes it doesn’t get much better than this!
2 cups frozen mixed vegetables (carrots, green beans, corn, peas), thawed and drained
1 can (10 1/2 ounces) Campbell?s Healthy Request Condensed Cream of Chicken Soup
1/2 cup low fat (1%) milk
Salt and Pepper for taste
Preheat the oven to 400?F.
Stir the sweet potatoes, brown sugar and margarine in a medium bowl.
Cook the turkey, onion, garlic, in a nonstick skillet over medium-high heat until the turkey is cooked through. Stir in the mixed vegetables, soup and milk. Add salt and pepper to taste. Spoon the turkey mixture into a 2-quart baking dish. Spread the sweet potato mixture over the turkey mixture.
