Cheesy Chicken Quinoa Casserole

We are still trying to eat healthy at my house. My whole family loves quinoa so I thought I would make it into a casserole. These is a lot of flavor, and you could easy add more veggies to make it even better for you! Hope you love it as much as we did!

Ingredients

  • 1 tablespoon extra virgin olive oil
  • 1 clove of garlic, minced
  • 2 green onions, chopped
  • 1 tomato, chopped
  • 1/2 cup of mushrooms, chopped
  • 1 8oz. can tomato sauce
  • dash of red pepper flakes
  • salt & pepper to taste
  • Garlic salt to taste
  • 2 cups cooked chicken, cut into bite size pieces
  • 2 cups cooked quinoa (I used red quinoa)
  • 1/2 red bell pepper, chopped
  • 1/4 cup cilantro, chopped
  • 11/2 cups shredded mozzarella cheese

Instructions

  1. Preheat oven to 350 degrees and grease an 9 x 13 glass pan
  2. In a skillet over medium-high heat, add olive oil, garlic, mushrooms and green onions. Saute for about 2-3 minutes.
  3. Add chopped tomato, tomato sauce, red pepper flakes, garlic salt, and salt & pepper. Stir and simmer for 5 minutes.
  4. Meanwhile, combine cooked quinoa, chicken, red pepper, cilantro and 1/2 cup of the cheese in your 9 x 13 pan.
  5. Pour your sauce and top and mix carefully until everything is combined.
  6. Top with remaining cup of cheese and cover with foil.
  7. Bake for 15 minutes. Remove foil and bake for another 10 minutes.
  8. Remove from oven and garnish with additional green onions and cilantro.

    Someday I hope bloggers will not automatically use mushrooms to make things 'healthy.' For me, with a mushroom allergy, this just doesn't work. I would have guessed I am alone in this, but in a small group of 14 friends, there are 3 of us with a mushroom allergy. Ah, well, we will cope. And in this case, leaving them out would not hurt the recipe. It would just give me some more room to insert some broccoli or asparagus.

    My kids all time home run/healthy meal hit is chicken + rice. That's what they like and eat. But rice isn't the healthiest item on earth from hubby and myself. So I have no clue why I never thought to substitute quinoa for the rice ~ the kids will still eat this (they're young enough that I can fool them) and we can eat a bit healthier. And the cheese on top just smooths it all over for me! I do so love casseroles when it a high of 12 degrees where I live!!!
