Ingredients

  • 1 Pound shrimp (I used the already cooked shrimp from the deli, but you can use raw shrimp, it will just be cooked a little different)
  • 1/4 Cup Olive Oil
  • 5 Tablespoons Honey
  • 1 Lime
  • 2 Cloves Garlic (smashed)
  • 1/2 teaspoon Pepper
  • 1/2 teaspoon Salt

Instructions

  1. In a bowl mix together olive oil, honey, the zest of the lime, the juice of the lime, garlic, pepper, and salt.
  2. Rinse off your shrimp. This is to be sure all of the ice is melted, and to give it a good rinse after coming from the deli. Best if you rinse with cold/warm water rather than hot, especially if working with uncooked shrimp, to avoid the shrimp beginning to cook while being rinsed.
  3. Put shrimp in gallon sized Ziploc bag and dump marinade over the shrimp.
  4. Make sure the marinade is completely coating all of the shrimp and seal the bag and put it in the fridge.
  5. Let it marinade for 1-2 hours, the longer you let it marinade the better the flavor!
  6. On a frying pan over medium heat, warm up the shrimp. I like to pour the marinade over the shrimp while it's heating up so that it can cook in the flavor.
  7. Cook until the shrimp begins to turn golden brown.
  8. Enjoy! I like to put this in salads, or serve it with rice for dinner!

This recipe was delicious and so easy! My hubby and I have been watching our calories since the holidays and this fit the bill. I served the shrimp w/ the roasted broccoli and califlower which is another hot in our household. Thanks for the great tips!! Sue K
