Anyway- back to the recipe!

One of my husband’s favorite desserts of all time are our Thin Mint Truffles. If I “accidentally” spend too much on a pair of winter boots, those truffles can help him to forgive me a little more quickly. 😉 They are pretty much magical.

I found myself in a similar predicament earlier this week with my husband (there was a good sale on kids’ clothes at Baby Gap!) and I discovered that there were no thin mint cookies to be found in my house. I did, however, have some store-brand lemon sandwich cookies. I thought about it for a minute and decided that it was worth a shot . . . which ended up being the best decision I made all day!

Three ingredients, no baking required, and a husband who has forgiven me once again for my shopping addiction . . . this is the best dessert ever.

No Bake Lemon Cookie Truffles Recipe

These are one of my favorite treats of all time- only three ingredients, no baking required, and everyone who tries them needs the recipe ASAP!

Ingredients

  • 1 (16 oz) package lemon sandwich cookies (I used a generic store brand)
  • 1 (8 oz) package cream cheese
  • 1 (16 oz) package almond bark (or white chocolate candy coating)
  • yellow jimmies/sprinkles (optional)

Instructions

  1. Place cookies in a processor and crush until they are fine crumbs (if you don't have a food processor, you can put cookies in a resealable plastic bag and smash with a rolling pin until they are crumbs).
  2. Place crumbs in a medium bowl. Add cream cheese and mix until well-blended. Roll cookie mixture into 1 inch balls (makes about 48 balls). Place balls on a cookie sheet lined with aluminum foil or wax paper and stick in the fridge for about 45 minutes.
  3. Melt almond bark according to directions on package. Dip each cookie ball in almond bark and place back on lined cookie sheet. Top with yellow sprinkles (if desired). Repeat with remaining cookie balls and place back in the fridge for about 30 minutes.
  4. Store leftover truffles in a covered container in the fridge.

I know that in the past we have had a couple people ask the best way to dip the truffles – I just place the cookie ball in the melted chocolate and roll it around with a spoon until it’s completely coated. I then lift truffle from chocolate using 2 forks (this will allow excess chocolate to run off) before placing on wax paper/aluminum foil.

    • Substitute for 1 cup of cream cheese - To be Replaced with: ½ cup of Yogurt + ½ cup of Ricotta Cheese (try using ricotta cheese made from partially skimmed milk for best results) Nature of the Substitute: Ricotta cheese is rich in calcium and sweeter in comparison to cottage cheese.     • what is he allergic to? almond bark is just the name. but you can get the white chocolate disks, (like Wilson ones at walmart) or use white chocolate chips. if he's allergic to chocolate? ummm... carob? but I'm not sure if there is a white carob?
