Do you love meatloaf? This bacon wrapped meatloaf is so moist and tastes amazing that is it sure to be a favorite in your house. It is also very moist easy to make! Hope you love it as much as we did!
1/2 medium white onion, finely chopped (about 1 cup)
2 medium garlic cloves, minced
1/8 tsp of dried thyme
2 large eggs
1/4 cup of buttermilk
2 Tablespoons Dijon mustard
2 Tablespoon Worcestershire sauce
1/4 cup of ketchup
1 teaspoon of salt
1/2 teaspoon freshly ground black pepper
2 pounds of ground turkey (Jennie-O is our favorite)
1 cup of Old Fashioned Oats
10 Pieces of precooked bacon (I usually use turkey bacon, but I had some regular left over)
For the sauce:
1/4 cup ketchup
1 Tablespoons of Worcestershire sauce
3 Tablespoons of brown sugar
Heat the oven to 400 degrees. Line a large bread pan with foil and then spray it with non stick spray. .
In a large bowl, add the onions, garlic, thyme, eggs, buttermilk, mustard, Worcestershire, ketchup, salt, and pepper. Whisk until the eggs are broken up and evenly combined. Add the ground turkey, and old fashioned oatmeal.. Mix until thoroughly combined. I usually mix mine by hand.
In a small bowl, mix together the ketchup, Worcestershire sauce and brown sugar to made your sauce.
Lay your bacon in the bottom of your bread pan. Lay them slightly on top of each other and allow the ends to come up the sides. (You will be flipping it after it is cooked, so the bacon will end up on the top)
Once your bacon is layered, pour your sauce mixture over the bacon so it covers the bottom of the bacon layered pan.
Add your meatloaf into the pan. Do it in small chunks to make sure your bacon stays up the sides of the pan.
Once you have filled your pan, stick it in the oven for 80 minutes, or until your meat is cooked through. Let cool about 10 to 15 minutes before serving.
