I know what you are thinking… chili in the summer? Believe it or not, I love soup in the summer. It is fast, and not as heavy as some other foods. This Skinny White Bean Chili tastes so good with the fresh ingredients and is easy to make!
2 cups cooked shredded chicken (I used rotisserie chicken)
2 (15-oz) cans Great Northern beans, rinsed and drained
2 cups of mild salsa verde
2 tsp. ground cumin
1 diced avocado
2 Tablespoons of chopped fresh cilantro
You can also add some chopped green onions for flavor
Place the chicken broth, shredded chicken, beans, salsa and cumin to a medium saucepan. Place your pan on the stove and cook over medium high heat. Stir well until it is all combined. Heat until boiling, cover and reduce heat to low. Simmer for 5 minutes.
When ready to serve, mix in your cilantro, avocado and green onions.
