Savory Salmon with Tangy Horseradish Sauce

My little family and I are pretty healthy eaters. One thing we have at least once a week is fish. Whether is be salmon, tilapia, crab, shrimp, trout or lobster, my kids have finally grown to love it (It took about a year of eating every week for them to like it)! Eating fish has opened a whole new set of doors when it comes to the cooking world! If you have never tried salmon before, I challenge you to give it a try! It tastes so good and it is good for you!

Spanish Beef and Rice Bake

  • 1 pound lean ground beef
  • 1/2 cup finely chopped onion
  • 1/2 cup chopped green bell pepper
  • 1 (14.5 ounce) can canned tomatoes
  • 1 cup water
  • 1/2 cup salsa
  • 3/4 cup uncooked long grain rice
  • 1/2 cup chili sauce
  • 1 teaspoon salt
  • 1 teaspoon brown sugar
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon Worcestershire sauce
  • 1 pinch ground black pepper
  • 1 (15 oz) can refried beans
  • 1/2 cup shredded Cheddar cheese
  • 2 tablespoons chopped fresh cilantro
  • 1/2 cup chopped cherry tomatoes


  1. Preheat oven to 375 degrees.
  2. Brown the ground beef in a large skillet over medium-high heat, lower heat to medium low heat. Stir in the onion, green bell pepper, tomatoes, water, salsa, rice, chili sauce, salt, brown sugar, cumin, Worcestershire sauce and ground black pepper.
  3. Let this simmer for about 30 minutes, stirring occasionally, then transport this to a 9x13" casserole dish sprayed with non-stick cooking spray. Press down firmly into the pan, then spread refried beans on the top and sprinkle with the shredded Cheddar cheese.
  4. Bake in preheated oven for 10 to 15 minutes, or until cheese is melted and bubbly. Garnish with chopped fresh cilantro and chopped tomatoes.
