Hot Chicken Salad Casserole Recipe

My kids are really liking casseroles right now,  so I found one that is a little healthier. This Chicken Salad Casserole has chicken, veggies, and almonds. It was a hit for everyone in my family, including my picky 3-year-old!

Ingredients

  • 3 cups cooked chicken breast, cubed
  • 2 stalks celery, diced
  • 1 red bell pepper, diced
  • 1 cup shredded cheddar cheese
  • 1 (10.75 ounce) can reduced-fat condensed cream of chicken soup
  • 1 (6 ounce) plain low fat yogurt
  • 1/2 yellow onion, diced
  • 1 Tablespoon lemon juice
  • 1/4 teaspoon black pepper
  • 1/2 cup crushed cornflakes
  • 1/4 cup sliced almonds

Instructions

  1. Preheat oven to 400 degrees F.
  2. In a large bowl stir together chicken, celery, pepper, cheese, soup, yogurt, onions, lemon juice, and black pepper.  
  3. Pour everything into a 9x13 baking dish that has been sprayed with nonstick cooking spray.
  4. In a small bowl stir together cornflakes and almonds. Sprinkle evenly over chicken mixture.
  5. Bake, uncovered, for 30 minutes or until heated through.
  6. Let stand for 10 minutes before serving.

    • Hi Dawn, I'm sure you could prepare this in a slow cooker. The temperatures of every crock pot vary slightly. You would need to check on the high temp of your slow cooker and then figure out how long to cook it. Low temp on a slow cooker is usually around 200 and high temp is around 300. Hope this helps. Should work just fine, be sure to watch it closely. The chicken is precooked so it mainly just need to be heated through well.
    • low fat sour cream. I made a casserole similar to this one last night, it called for sour cream, and I thought I would get ahead of myself and sub greek yogurt instead. It was very sour and bitter tasting. So if you don't want that, I would sub the yogurt for sour cream.
