Fresh Strawberry Cream Filled Cookies Recipe

We are in the middle of winter and missing the huge variety of fresh fruit that we get in the summer and fall!  But these past few weeks we have had fresh strawberries in the groceries stores (maybe a hint of spring?!)! That is why we love these strawberry cookies.  They are made with real whipping cream and fresh strawberries! This cookie is a winner any way you look at it!

A delicious breakfast or brunch that is super simple to throw together.

  • 4 freshly baked croissants
  • 8 eggs
  • 12 strips bacon, cooked
  • 1 avocado, sliced thin
  • 4 slices cheddar cheese


  1. In a griddle or frying pan over medium heat, cook eggs over-easy.
  2. Preheat oven to broil.
  3. Cut croissants, and place the top and bottom of each croissant center-side up on a baking sheet.
  4. Top the bottom of each croissant with two eggs, 3 strips of bacon, 1/4 the avocado slices, and one slice of cheddar cheese.
  5. Broil the open-faced sandwiches, as well as the tops of each croissant, for 1-2 minutes until cheese is melted and the croissant starts to crisp slightly.
  6. Remove from the oven, place the top of each croissant on each bottom, and serve warm.
