Piña Colada Fruit Smoothie Recipe

A year and a half ago, my husband and I went on a trip to the Dominican Republic.  He served a mission for our church there for two years after his first year of college.  I wanted to go back and see all of the places he lived in and meet people he had taught.

It was absolutely gorgeous there!  I am trying to convince him we need to go back and get out of this freezing Utah weather. 🙂

One of my favorite things about the trip were the unlimited piña coladas our resort would serve.  I was 8 months pregnant at the time, so anything to cool me down was much needed.  I drank so many of these, I couldn’t even keep track!  I was craving some so badly this week, that I decided to make my own.

Piña Colada Fruit Smoothie Recipe

Ingredients

  • 3 cups pineapple juice
  • 2 cups frozen banana slices
  • 2 cups pineapple sherbet
  • 1/4 cup shredded coconut
  • 1/2 teaspoon coconut extract

Instructions

  1. Combine all ingredients in a blender until smooth.
  2. Pour into cups and serve immediately.
