Easy Lemon Sheet Cake Recipe

I love sheet cakes- they are perfect for when you need to feed a crowd or need a yummy dessert in a very short amount of time. There are over 20 people at all of our parties and gatherings, so big desserts like this are a staple! And since dessert is our favorite part of any family gathering, we need as much as possible! 🙂

Ingredients

    Cake:
  • 1 (15.25 ounce) lemon cake mix
  • 4 eggs
  • 1 (15.75 ounce) can lemon pie filling
  • Cream Cheese Frosting:
  • 1 (8 ounce) pkg. cream cheese, room temperature
  • 1/4 cup butter, softened
  • 3-4 cups powdered sugar
  • 1 teaspoon vanilla

Instructions

  1. Preheat oven to 350 degrees F.
  2. In a large bowl, combine the cake mix and the eggs- mix well until fully incorporated.
  3. Fold in pie filling.
  4. Spread into a greased 15-in. x 10-in. x 1-in. baking pan.
  5. Bake for 18-20 minutes (or until a toothpick inserted near the center comes out clean).
  6. Let cool for about 30 minutes.
  7. In another bowl, add cream cheese and butter and beat until smooth.
  8. Add powdered sugar and vanilla and mix again.
  9. Frost top of cake once it's cooled.

    When you say cool cake...do you mean in the pan or out of the pan on a rack? I was wondering if the cake would fall apart if I cool it on a rack because of the consistency. With cooling it in the pan (like brownies) I was concerned if it would come out when serving. Thanks in advance for your response. Looking forward to making this today for my daughter's baby shower. : )
