Mini Turtle Cheesecakes

I think I have professed my love of cheesecake before – but just to reassure you – I REALLY love cheesecake. My husband and I went to the Cheesecake Factory to celebrate our birthdays – and we each picked a slice. I, of course, went straight for the turtle cheesecake. There’s just something about the delicious combo of fudge, caramel, pecans, and cheesecake. I was having withdrawals when I came across Camille’s post for Mini Cherry Cheesecakes, and I knew I could make mini turtle ones! I added an Oreo crust and topped them with the classic “turtle” taste. And like the mini cherry cheesecakes, I bet you can’t eat just one!

Ingredients

  • 18 Oreos, finely crushed
  • 3 tablespoons butter, melted
  • 2 8-oz packages of cream cheese, softened
  • 2 eggs
  • 3/4 cup sugar
  • 1 teaspoon vanilla
  • 1 teaspoon lemon juice
  • pecan halves
  • fudge topping
  • caramel topping
  • mini muffin liners

Instructions

  1. Completely combine Oreos and butter, and press mixture in the bottom of each liner.
  2. Mix together cream cheese, eggs, sugar, vanilla, and lemon juice until light and fluffy. Spoon the cream cheese mixture into each liner, filling it almost to the top.
  3. Bake for 15 minutes at 350 degrees.
  4. Let cool completely, and then refrigerate for at least an hour. Top each with pecan halves, and drizzle with fudge and caramel.

  1. I've made mini cheesecakes before and did a whole variety. Making tiny crumb crusts is such as hassle for a lazy baker like me! I used whole cookies from the 100-calorie packs. 100-calorie Oreos are so good and fit my mini muffin tin pretty well with a bit of smushing. I also used the 100-calorie Chips Ahoy for a batch of mini chocolate chip cheesecakes. My original recipe was for full-size muffins and called for a whole vanilla wafer rather than crumbles and butter. This is also an excellent shortcut! I've used half of an Oreo for cupcake-size chocolate cheesecakes. So scout out the cookies aisle and see what you find!!

    I made these for a small dinner party this evening. When I first brought them out I was asked if I had bought them. My guests were very impressed & thought I had bought them @ a bakery! This was a real compliment to me as it was the first time I had even made cheesecake dessert! Evryone had seconds & also asked to take some home. Even my son, who stated "I don't like cheesecake" while I was preparing them decided to try one and was hooked :)
