Skinny Potato Casserole

I love creamy cheese potato casserole but I don’t love all the fat grams and calories that go with it.  This Cheesy Potato Casserole is so easy and so Delicious!!!!

Skinny Potato Casserole:

Ingredients:
1 (22oz) bag frozen Shredded Hash Browns

1 1/2 cups plain Greek Yogurt

1/2 cup fat free sour cream

1/2 cup fat free chicken broth

1/2 cup skim milk

1 tsp Garlic Powder

1 tsp Onion Powder

1 tsp Season All Salt

1/2 tsp Black Pepper

1 cup shredded cheddar cheese 

 

Directions:
Preheat oven to 350 degrees.

Combine all ingredients into a large bowl.  Grease a 9 X 13 glass or ceramic baking pan with cooking spray.  Pour potato mixture into baking pan and spread evenly.  Bake uncovered for 55 min.

  1. Made this tonight for dinner. Personally, I didn't care for it. It tasted odd & seemed like it needed something. My son didn't care for it either (course, he is going through that picky stage right now. Very hard to please him). My husband on the other hand liked it. He said he wouldn't do anything to change it other than add some crumbled bacon.
  2. I was so excited to try this because I love hashbrown casserole... but I'm sorry to say this wasn't good. And I like almost everything. After baking it looked weird, tasted off (I hesitated on the Italian seasoning but I like to make a recipe as written the first time), and it wasn't creamy or cheesy in my opinion. Very disappointing.
