Guacamole Salsa

The past couple of weeks I’ve been on an avocado kick. I eat them with everything, and sometimes even plain! It’s Avocado season so they are pretty cheap, which is perfect for my very small, college grocery budget.  I was thinking of what I could make this week and I stumbled across possibly my new favorite food. Guacamole Salsa! I’ve been putting it on everything from my barbecue pork to my vegetables. It’s seriously so good, and pretty healthy!

Guacamole Salsa

Ingredients

  • 1 lb  tomatillos (the more tamatillos, the thinner the salsa)
  • 1 jalapeno pepper (feel free to add more if you like it really spicy)
  • 1/3 bunch cilantro
  • 1 thick slice of onion
  • 1/2 garlic clove
  • 1 avocado
  • 1 tomato
  • 1 teaspoon salt

Instructions

  1. Peel and wash the tomatillos, cut it into quarters and put them in the blender, follow with the jalapeno, cilantro, onion, garlic, tomato, avocado & salt.
  2. Be sure to put the tomatillos at the bottom of the blender, not the avocados, otherwise they will stick to the blades.
  3. Blend together and chill until ready to serve.
