Cherry Cola Jello Salad

With summer in full swing, I am always looking for fun summer dishes to take to BBQ’s and parties. I came across this dish and thought it was a brilliant combination! The cherries and cola flavor put it over the top!

Ingredients

  • 1 can (20 oz) crushed pineapple with juice
  • 1/2 cup water
  • 2 (3 oz) packages cherry flavored jello
  • 1 can (21 oz) cherry pie filling
  • 3/4 cup cola

Instructions

  1. Drain pineapple (saving the juice) and set the fruit aside. In a saucepan, bring the pineapple juice and water to a boil. Add jello and stir until it's completely dissolved. Stir in the cola, pineapple, and the pie filling and mix until completely incorporated.
  2. Pour jello into a large serving bowl or 9x11" pan. Refrigerate until firm (about 4 hours).

    I'm going to try the "diabetes-friendly(ish)" version of this... looks like it should be really convertible (diet coke, SF jello, NSA pineapple, Splenda pie filling) without sacrificing TOO much flavor :-) This is so "different" that it is GENIOUS, and if the test-drive is as tasty as I'm expecting, it'll probably be my go-to carry-in fruit dish! I've been wanting something that is unusual and "me," and it doesn't get much more "me" than diet coke. ;-)
