Peanut Butter Butterfinger Cookies {with Truvia® Baking Blend}

As Truvia® ambassadors, we have had the opportunity to try some of their products, and we have fallen in love with the Truvia® Baking Blend. This natural, gluten-free sweetener is a great way to decrease your calorie intake while still enjoying the food (and treats) that you love!

Peanut Butter Butterfinger Cookies {with Truvia® Baking Blend}:
(Makes approx. 3 dozen cookies)
Ingredients:
1/2 cup butter, softened
1/2 cup creamy peanut butter
3/4 cup Truvia® Baking Blend*
1/2 cup light brown sugar
1/2 teaspoon baking soda
1/2 teaspoon baking powder
1 egg
1 teaspoon vanilla extract
1 1/4 cups all-purpose flour
4 regular size Butterfinger candy bars, crushed
Directions:
Preheat oven to 375 degrees.  Beat butter and peanut butter for 30 seconds.  Add Truvia® Baking Blend, brown sugar, baking soda and baking powder.  Beat until combined.  Beat in egg and vanilla until combined.  Stir in flour.  Fold in crushed Butterfinger pieces.  Roll into 1-inch balls and place on an ungreased cookie sheet.  Bake for 7-9 minutes, or until golden brown.
(*You can substitute 1 1/2 cup sugar)

  1. These look so good!! A quick question though....in the recipe you say to use 3/4 c. Truvia blend or 1/2 c. sugar, but then afterward you said, "convert any recipe by using half as much baking blend as you would sugar". Should the recipe have said 1/4 c. Truvia? Or maybe I'm missing something? Either way, I'll be making these for sure! =)
