Egg Nog Fudge

Merry Christmas Eve! I hope you are all spending time with your family or friends tonight! One tradition we started when we lived in Missouri was to make fudge on Christmas Eve. So this year we will be making eggnog fudge and drinking our eggnog along with it! Merry Christmas everyone!

Ingredients

  • 2 cups granulated white sugar
  • 1/2 cup butter
  • 3/4 cup dairy eggnog (I used lowfat)
  • 10.5 ounces white chocolate almond bark (chopped into small pieces)
  • 1/2 teaspoon of nutmeg
  • One 7-ounce jar marshmallow creme

Instructions

  1. Line an 8 or 9-inch square pan with foil and let it hang over the sides. Spray with non stick spray.
  2. In a saucepan combine sugar, butter and eggnog. Bring to a boil, stirring constantly. Continue boiling 8 to 10 minutes over medium heat or until a candy thermometer reaches 234°F, stirring constantly to prevent scorching. Remove from heat.
  3. Using a wooden spoon, work quickly to stir in chopped white chocolate and nutmeg until chocolate is melted and smooth. Stir in marshmallow creme. Beat until well blended and then pour into prepared pan. Let stand at room temperature until cooled. Refrigerate if you'd like to speed up the process.
  4. When completely cool, cut into squares. Store in a covered container

    I made 2 batches of this and it was DELICIOUS! Unfortunately though - one batch never firmed up (even in fridge) and though the other batch did firm up - it stayed very soft and if left out at room temperature long got a bit too soft. I'll try it again though, and hopefully get it right! Any suggestions?
