Mixed Berry Parfait Salad

 With the holidays right around the corner, you are going to want to bookmark this recipe because it is perfect for a potluck party or family dinner . . . and it’s so easy! You can’t mess it up! 🙂 This salad is one of my favorites because it comes together in a matter of minutes and tastes amazing. And even though berries aren’t in season right now, you can use frozen berries and it’s delicious.
I use it as a side dish, but it is also a great dessert! I promise that anyone who tries it will be licking their bowl.

Ingredients

  • 2 containers (6 oz each) mixed berry yogurt (or your favorite fruity flavor)
  • 1 box (3.4 oz) instant vanilla pudding
  • 1 container (16 oz) whipped topping (such as Cool-Whip)
  • 16 oz of your favorite berries (I used a bag of frozen raspberries, blackberries, and blueberries)

Instructions

  1. Dump the yogurt and the dry powdered pudding mix into a bowl and mix well (just ignore the directions on the pudding box- you just need the powder to make this salad), until the little "lumps" are practically gone. Fold in your whipped topping and fruit and gently mix until all combined. Serve immediately (or keep in fridge until serving). I suggest making this no earlier than the day you plan on serving it.
