Slow Cooker Busy Day Stew

Before leaving Missouri I had a friend give me all of her family cookbooks. I really think I was in heaven! This was one of easiest crock pot meals I have ever made. It took under 10 minutes to chop everything and throw it in the slow cooker.  And believe it or not… the taco seasoning added just the right touch!

Ingredients

  • 1 to 2 pounds of stew meat
  • 1 small bag of baby carrots
  • 1 onion chopped
  • 2 large potatoes, chopped
  • 1 can diced tomatoes
  • 1 large tomato, cut
  • 2 cloves garlic, minced (optional)
  • 1/2 package of taco seasoning mix
  • 1 can of beef broth

Instructions

  1. In your crock pot add your stew meat (mine was still frozen), carrots, onion, potatoes, canned and large tomatoes, and garlic. Sprinkle the taco seasoning on top then add your beef broth. Cook on Low for 6 to 8 hours or until carrots and potatoes are soft.

    • I know this was like a year ago... But you could add a mixture of cornstarch and water. Table spoon of cornstarch and a half a cup of hot water. Mix the cornstarch into the water so it is dissolved. It will make the sauce thicker. You could do this with a half hour left of the time and it will thicken.
