One of my favorite dessert combinations is that of chocolate, marshmallows, and graham crackers. However, I hate how sticky and messy regular s’mores can be. After Elyse shared her recipe for S’mores Bars, I started thinking of how good all the ingredients of s’mores would be in a cookie. I googled a couple of recipes and stumbled on this one.

these are seriously one of the best cookies I have ever had! I think that it is because of the crushed graham crackers in the dough.
And the cookie dough . . .
(I am totally a cookie dough junkie and would rather eat raw dough instead of a cookie any day).
These cookies will take care of my s’mores cravings year round . . . you are going to love them!
1 cup chocolate chips (mini chips would be really cute for these cookies)
1/2 cup Jet-Puffed Vanilla Mallow Bits*
Extra chocolate chips and mallow bits (optional)
Preheat the oven to 350 degrees F
In a large bowl, whisk together graham cracker crumbs, flour, baking soda, and salt. Set aside.
In another bowl, beat the butter and sugars together until creamy and smooth. Add in the egg and vanilla extract and mix until combined. Slowly add the dry ingredients and mix until just combined.
Stir in the Mallow Bits and chocolate chips and mix until just combined.
Drop a heaping tablespoon of dough on the baking sheet. I stuck in a few extra chocolate chips and Mallow Bits onto the top of the dough for looks, but you can skip this step if you wish. Keep cookies spread about 1-2" apart. Bake for 6-8 minutes, or until cookies are set. Cool on the baking sheet for 2 minutes and transfer to a wire cooling rack.
