Guiltless Chicken Alfredo Recipe

My husband can’t seem to get enough Chicken Alfredo.  I don’t make it very often because it is usually ranks quite high in the calorie department.  That was, until we found this tasty recipe!  My husband said it tasted better than the “regular” version!

Guiltless Chicken Alfredo Recipe

  • 2 cups low-fat milk
  • 1/3 cup (3 oz) low fat cream cheese
  • 2-3 tablespoons flour
  • 1 teaspoon salt
  • 1 tablespoon butter
  • 3 cloves, minced garlic
  • 1 cup grated, Parmesan cheese
  • 2-3 chicken breasts, cooked and sliced
  • 10 ounces pasta, plain and cooked


  1. Place milk, cream cheese, flour, and salt in a blender and blend until smooth. In a non-stick sauce pan, melt butter on med-high heat and add garlic. Let the garlic saute for about 30 seconds, you don?t want to burn it.
  2. Add milk mixture to the pan. Stir constantly for about 3 or 4 minutes or until it just comes to a simmer. Keep stirring and let it cook for a few minutes more. It should be much thicker now.
  3. When it?s nice and thickened remove the pan from the heat. Add the cheese and chicken, stir it up and then cover immediately. Let stand for at least 10 minutes before using. It will continue to thicken upon standing. Also, if you have leftovers in the fridge, the sauce will thicken almost into a solid. Just re-heat and add a little milk and it will be back to normal again.

    Hi Six Sisters! I just wanted to say that I love all your recipes. Every single one I've tried is amazing! Quick question, I don't have a blender. Could I use my Kitchen Aid stand mixer? Also I used grated parmesan topping in my first run of this recipe, like the kind you put on top of pasta. Was I supposed to use shredded parmesan cheese? Thanks!! :)
  5. I made this tonight, it was good, but i would suggest using a little less parm cheese. Mine was very thick so I would suggest using more milk, and less cheese. It was still good, but I'd like it to be a lot less thick. It was really good though.
