Healthy Meals Monday: 5 minute Black Bean and Corn Salsa

This salsa really only takes 5 minutes to make and it is delicious! Not to mention, good for you! I found this in an old cookbook and changed it around to my liking. You could use chips, but I used low fat, whole wheat crackers, and it was super yummy!

Salsa:
1 can black beans- rinsed and drained
1 can corn, drained
1 can olives, sliced
1 bunch green onions, minced
1 bunch cilantro, chopped
2 tomatoes, chopped
2 avocados, diced

Sauce:
1/4 cup red wine vinegar
1/4 cup olive oil
1 tsp cumin
3/4 tsp. salt
1/8 tsp. pepper
2 cloves garlic, minced

Prepare the sauce by mixing all the sauce items together. Add remaining ingredients to the sauce and mix well. Refrigerate until ready to eat. The longer this sits, the more it soaks up the sauce, making it even better!
Then with leftovers I pour over a spinach or lettuce salad and use the salsa as my dressing!
