Mom’s Easy Chicken Broccoli Casserole (Chicken Divan)


I have tried a couple of different versions of this chicken broccoli casserole, but I like Mom’s the best. We also call it Chicken Divan. ┬áThis is one of my husband’s favorite meals (and mine too!)

Ingredients

  • 2 bunches fresh broccoli (I also sometimes use frozen, about 1 1/2 bags)
  • 4-6 boneless, skinless chicken breasts, cooked
  • 2 cans cream of chicken soup
  • 1 cup mayo
  • 1 teaspoon lemon juice
  • 1/2 teaspoon curry powder
  • 1 cup shredded sharp cheddar cheese
  • 1/2 cup soft bread crumbs (1 1/2 slices of bread)
  • 1 tablespoon melted butter

Instructions

  1. Preheat oven to 350 degrees.
  2. Cook broccoli in boiling salted water until tender and drain.
  3. Arrange stalks in greased 9x13 pan.
  4. Place cooked chicken breasts on top of broccoli. Combine soup, mayo, lemon juice, and curry powder; pour over chicken. Sprinkle with grated cheese. Combine bread crumbs with butter and sprinkle on top.
  5. Bake for 25-30 minutes.

Notes

*Sometimes I add a couple of tablespoons of milk to the soup mixture so that it makes a "gravy" and serve that over baked potatoes as a side dish.
Also, in the picture, I didn't have bread crumbs, so I just broke a piece of bread into tiny pieces and soaked it in the melted butter and spread that on top.

  1. This recipe has been in our family for 30 years and one of our favorites! Ours is just a little bit different, but the changes make a huge difference: Add a can of sliced water chestnuts (these MAKE the recipe!), chop the chicken up and sprinkle it over the broccoli instead of leaving the breasts whole, and instead of bread crumbs, in the last 15 minutes of baking, top with garlic & cheese croutons and then sprinkle with the cheese. LOVE IT!
