Hashbrown and Egg Breakfast Casserole

One of our favorite meals at this house is “Brinner” (Breakfast for dINNER). It’s something that the kids will actually eat, so we have it a lot. ┬áNot only was it super easy, but it tasted AWESOME! This would also make a delicious brunch or breakfast burrito filling! It was so yummy.

Ingredients

  • 1/2 lb cooked bacon, ham, or breakfast sausage (or any combination of the 3- I had leftover ham from Sunday dinner and used that)
  • chopped veggies (optional; we like to use broccoli & tomatoes. You can also do red peppers/green peppers and onion if you want even more flavor)
  • 12 eggs
  • 1 c. milk
  • 1 pkg. (1 b.) frozen shredded hash browns (I used O'Brien hashbrowns- they have peppers already in them- they were delicious)
  • 1 c. cheddar cheese (shredded)
  • 1 tsp. salt
  • 1/2 tsp pepper

Instructions

  1. In a bowl, beat eggs and milk. Stir in all other ingredients. Put in greased 9x13 pan and bake at 350 for 45-55 min or until well set. Serve topped with salsa and additional cheese.

  1. I would like to make this for about 30 people. I will be using large industrial size baking pans. What temp should I use and can this recipe be tripled? Please help. This will be served at a church breakfast honoring teachers for the upcoming school year. Thanks for your help
    • Hi Susan. This recipe can be tripled. But we have never made it in an industrial sized baking pan/dish. We made it in a 9 x 13, so you would need to be sure your baking pan is as deep as the 9 x 13. Having the pan that big, you may need to add a little more cooking time. Be sure it's cooked all the way through and not jiggly in the middle. You could always make 3 9x13 pans of this! It can be prepared the night before and then cooked in the morning.
