Growing up, there was little I hated more than weeding our garden.  I remember our parents telling us it was time to go out and weed and we would whine and complain like crazy!  But all of that weeding seemed worth it when we could eat tasty vegetables fresh from the garden!  My favorite was always the green beans.  I think roasting the beans with a few simple ingredients make them taste even better!

My friend told me that I could replace all of my usual cleaning products with just two simple cleaning cloths and some water.  I’m not going to lie, I was a little skeptical at first!  Being a bit of a germaphobe, I wasn’t sure they would do the trick the way that all my heavy duty cleaners would….but I was totally wrong! Here are a few of our favorite ways to use Norwex:

What makes Norwex microfiber different is the fact that each microfiber cloth contains over 2.9 million meters of fiber!  Those millions of tiny fibers collect bacteria, dust, dirt and grease from all washable surfaces using water without chemicals!  Norwex microfiber has micro silver spun into each cloth that coats the fibers and prevents bacteria from growing.

Grilled Vegetable Kebobs Recipe

grilled vegetable kebobs recipe

Now that the Utah snow has finally melted, grilling season has begun!!

I don’t have a problem coming up with main dishes, but side dishes are definitely not my strength! This is one of my favorite side dishes to make whenever we are grilling- just throw them all on the grill at the same time and your complete dinner is done!

(PS- this really isn’t a recipe, more of an idea . . . I just use whatever I have on hand. Anything goes!)

Grilled Vegetable Kebobs
1 red bell pepper, chopped into large pieces
1 green bell pepper, chopped into large pieces
1 cup fresh mushrooms
1 large zucchini, thickly sliced
1 large yellow zucchini squash, thickly sliced
1 cup cherry tomatoes
1 red onion, chopped into large pieces
1 cup Italian dressing (my favorite is Wishbone Robusto Italian- not a sponsored post, just my honest opinion!)

Place all vegetables in a large bowl. Pour the dressing on them and mix until all vegetables are evenly coated. Cover with plastic wrap and let marinade in the fridge for at least 30 minutes (I left mine for about 2 hours).
Remove vegetables from marinade (save your marinade) and thread onto skewers. If using wooden skewers, let them soak in water for about 30 minutes to prevent burning.
Heat grill to medium high heat and place skewers on top of grill. Cook vegetables until the grill marks start to show (about 10 minutes), rotating vegetables occasionally. If desired, baste with additional marinade.

Makes about 6-8 servings.

You may have seen on Pinterest and Facebook our posts mentioning The Mom Summit which is coming up April 7th – April 14th. I hope you will take a minute to click on it and see all the great information that is available through this FREE online conference just for moms (a conference you can attend from the comfort of your home in your pajamas!).

the mom summit lineup

The purpose of The Mom Summit is to give moms information that will make their lives easier and more enjoyable- and to celebrate being a mom! I will be joining more than 30 contributors who will be teaching classes on topics such as parenting, cooking, organization, health and fitness, relationships, balancing work and home life, and more! It’s hard work to be a mom and when we come together, share ideas, and share our little victories, it makes us realize just how amazing and powerful we are!

Many of the bloggers and authors who are involved in The Mom Summit are very healthy eaters. :) I have really been working on trying to have more vegetables on the table at dinner and a salad is an easy way to squeeze in tons of vegetables in just one serving. I made this for dinner the other night and then topped it off with my husband’s Homemade Balsamic Vinaigrette Dressing (or any dressing would be just fine- I really liked Italian dressing on it too!).

Italian Fresh Green Salad
6 cups romaine lettuce, torn into small pieces
4 cups fresh baby spinach
2 cups cherry tomatoes
1 (14 oz) can artichoke hearts, rinsed, drained, and cut into bite-size pieces
1 green bell pepper, thinly sliced
1 red bell pepper, thinly sliced
3/4 cup red onion, thinly sliced
1 small cucumber, sliced
1 (4 oz) can sliced olives, drained
1/2 cup sliced banana peppers (I bought these in a jar, next to the olives. I love them on sandwiches too!)
1 cup fresh shredded Parmesan cheese

In a large bowl, combine all salad ingredients.  Top with your favorite Italian or Balsamic Vinaigrette dressing, or whip up your own Homemade Balsamic Vinaigrette dressing.

Makes 15-20 servings for side dishes, or make this a main dish for about 6 people by adding a pound of grilled chicken.

Slow Cooker Glazed Carrots Recipe

I know I shared a slow cooker recipe this morning, but these two recipes go perfectly together!  I have two slow cookers just for meals like this.  I love having a side dish and main dish all ready to go in the evening just by doing a little preparation in the morning.  These carrots are so good, even my picky kids ate them!

Slow Cooker Glazed Carrots Recipe:
(Makes 6 servings)

1 (32 ounce) bag baby carrots
1/2 teaspoon salt
1/2 cup light brown sugar
3 Tablespoons butter, cut into small pieces
1 Tablespoon chopped fresh parsley, to garnish

Spray slow cooker with nonstick cooking spray.  Pour carrots in the bottom of crock pot.  Sprinkle on salt and brown sugar and top with butter.  Cover and cook on high for 4-5 hours or until carrots are desired tenderness.  Using a slotted spoon, remove carrots from slow cooker and place in serving bowl.  Garnish with fresh parsley and serve.
