Growing up, there was little I hated more than weeding our garden.  I remember our parents telling us it was time to go out and weed and we would whine and complain like crazy!  But all of that weeding seemed worth it when we could eat tasty vegetables fresh from the garden!  My favorite was always the green beans.  I think roasting the beans with a few simple ingredients make them taste even better!

Oven Roasted Green Beans Recipe

These Oven Roasted Green Beans are so fresh and flavorful! Even my picky eaters devour them!
Ingredients
  • 2 pounds fresh green beans, trimmed
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • ½ teaspoon pepper

Instructions
  1. Preheat oven to 400 degrees F.
  2. Place washed and trimmed green beans in a large Ziploc bag.
  3. Drizzle olive oil in the bag, seal and shake until all of the beans are lightly coated in oil.
  4. Spread beans in a single layer on a large baking sheet.
  5. Sprinkle with salt and pepper.
  6. Cook for 20-25 minutes, or until beans start getting brown spots on the outside.

I’ve never been a big fan of gluten free things… until I gained a gluten free roommate! Now I’m always snacking on gluten free crackers, bread, and experimenting with gluten free desserts just because I like the taste! We decided to try these gluten free brownies and just couldn’t resist plopping some delicious ice cream on top. If you’ve never had gluten free brownies before just be prepared for a very different and rich taste that’s absolutely delicious!

Gluten Free Brownie Sundaes

Delicious Gluten Free Brownie Sundaes
Ingredients
  • 15 ounce can black beans (drained and rinsed)
  • 3 eggs
  • ⅓ cup pumpkin puree
  • ½ cup cocoa powder
  • ¼ teaspoon sea salt
  • 2 teaspoons vanilla extract
  • ⅓ cup maple syrup
  • 1 teaspoon baking powder
  • ½ cup milk chocolate chips
  • Peanut Butter Swirl:
  • ⅔ cup peanut butter
  • ⅛ cup maple syrup
  • 1 teaspoon vanilla

Instructions
  1. Preheat oven to 350 degrees
  2. Place all brownie ingredients into a food processor.
  3. Blend until smooth and beans are completely mashed and mixed.
  4. Pour batter into a greased 8×8 pan
  5. On the stove over medium heat, melt peanut butter, syrup, and vanilla together.
  6. Using a spoon, dollop the peanut butter mixture into the brownie batter.
  7. using a butter knife, marble the peanut butter into the brownies.
  8. Bake at 350 for 35-40 minutes or until a toothpick comes out clean in the center.
  9. Let brownies cool before topping them with your favorite ice cream and toppings
  10. *The texture is not that of a regular brownie, they will be a little more crumbly and spongy, perfect for your ice cream sundae!

The hardest part about eating healthier for me is the vegetables.  I’ve never been a big veggie person, especially when they are raw.  Now that I’m trying to get back in shape after having the baby, vegetables are my new best friend!  These are so good that even my husband had seconds!

Oven Roasted Broccoli and Cauliflower

These oven roasted veggies are full of flavor!
Ingredients
  • 2 cups fresh broccoli florets
  • 2 cups fresh cauliflower florets
  • 4 Tablespoons olive oil
  • ½ teaspoon salt
  • ¼ teaspoon pepper
  • 2 teaspoons minced garlic

Instructions
  1. Preheat oven to 425 degrees F.
  2. Place broccoli and cauliflower florets in a large bowl. Pour olive oil over vegetables and toss until evenly coated.
  3. Add salt, pepper and minced garlic and mix until evenly distributed.
  4. Spread vegetables onto a baking sheet sprayed with nonstick cooking spray.
  5. Cook in oven for 15-20 minutes, or until vegetables are slightly brown and tender.

Now that the Utah snow has finally melted, grilling season has begun!!

I don’t have a problem coming up with main dishes, but side dishes are definitely not my strength! This is one of my favorite side dishes to make whenever we are grilling- just throw them all on the grill at the same time and your complete dinner is done!

(PS- this really isn’t a recipe, more of an idea . . . I just use whatever I have on hand. Anything goes!)

Grilled Vegetable Kebobs
Ingredients:
1 red bell pepper, chopped into large pieces
1 green bell pepper, chopped into large pieces
1 cup fresh mushrooms
1 large zucchini, thickly sliced
1 large yellow zucchini squash, thickly sliced
1 cup cherry tomatoes
1 red onion, chopped into large pieces
1 cup Italian dressing (my favorite is Wishbone Robusto Italian- not a sponsored post, just my honest opinion!)

Directions:
Place all vegetables in a large bowl. Pour the dressing on them and mix until all vegetables are evenly coated. Cover with plastic wrap and let marinade in the fridge for at least 30 minutes (I left mine for about 2 hours).
Remove vegetables from marinade (save your marinade) and thread onto skewers. If using wooden skewers, let them soak in water for about 30 minutes to prevent burning.
Heat grill to medium high heat and place skewers on top of grill. Cook vegetables until the grill marks start to show (about 10 minutes), rotating vegetables occasionally. If desired, baste with additional marinade.

Makes about 6-8 servings.

Many of the bloggers and authors who are involved in The Mom Summit are very healthy eaters. :) I have really been working on trying to have more vegetables on the table at dinner and a salad is an easy way to squeeze in tons of vegetables in just one serving. I made this for dinner the other night and then topped it off with my husband’s Homemade Balsamic Vinaigrette Dressing (or any dressing would be just fine- I really liked Italian dressing on it too!).

Italian Fresh Green Salad
Ingredients:
6 cups romaine lettuce, torn into small pieces
4 cups fresh baby spinach
2 cups cherry tomatoes
1 (14 oz) can artichoke hearts, rinsed, drained, and cut into bite-size pieces
1 green bell pepper, thinly sliced
1 red bell pepper, thinly sliced
3/4 cup red onion, thinly sliced
1 small cucumber, sliced
1 (4 oz) can sliced olives, drained
1/2 cup sliced banana peppers (I bought these in a jar, next to the olives. I love them on sandwiches too!)
1 cup fresh shredded Parmesan cheese

Directions:
In a large bowl, combine all salad ingredients.  Top with your favorite Italian or Balsamic Vinaigrette dressing, or whip up your own Homemade Balsamic Vinaigrette dressing.

Makes 15-20 servings for side dishes, or make this a main dish for about 6 people by adding a pound of grilled chicken.

Slow Cooker Glazed Carrots Recipe

I know I shared a slow cooker recipe this morning, but these two recipes go perfectly together!  I have two slow cookers just for meals like this.  I love having a side dish and main dish all ready to go in the evening just by doing a little preparation in the morning.  These carrots are so good, even my picky kids ate them!

Slow Cooker Glazed Carrots Recipe:
(Makes 6 servings)

Ingredients:
1 (32 ounce) bag baby carrots
1/2 teaspoon salt
1/2 cup light brown sugar
3 Tablespoons butter, cut into small pieces
1 Tablespoon chopped fresh parsley, to garnish

Directions:
Spray slow cooker with nonstick cooking spray.  Pour carrots in the bottom of crock pot.  Sprinkle on salt and brown sugar and top with butter.  Cover and cook on high for 4-5 hours or until carrots are desired tenderness.  Using a slotted spoon, remove carrots from slow cooker and place in serving bowl.  Garnish with fresh parsley and serve.
