Oh Jell-o . . . you are one of my guilty pleasures!
Is it a dessert? Is it a side dish? Honestly, I eat it for both. 🙂
We only bust out the jell-o recipes for special occasions at our house and this is probably the best jell-o recipe that I have ever tried.
There is a funny story behind this recipe . . . years ago, my sister-in-law Aleisha (from Call Me Mama Leisha) gave me this recipe. It was before the blog had even started and I will still learning my way around the kitchen. I was living in a tiny apartment and literally had ZERO counter space, so I was preparing this jello on my stove top. I placed the 9×13″ glass dish on one of the burners – the one that I THOUGHT I had turned off. Oh man, was I ever wrong. That burner was actually on high heat and after my pan had been sitting on this hot burner for about 5 minutes, it literally EXPLODED. Into a million tiny glass shards. I literally had glass in my hair, in my ears, in my socks, and on every square inch in that little kitchen! We cleaned up tiny glass pieces for a good couple of months after this explosion. And seriously, I thought that our apartment building was being bombed!!!
After that experience, I felt as though this recipe was cursed and never went back to making it – I always had to wait until my sis-in-law brought it to a family function. I finally decided to try it again and it was a smashing success! I’ve come a long way since those tiny apartment cooking days! 😉 Ha ha!
