Heat a skillet over medium high heat. Add sausage and cook until it is browned.
Spray a 9 X13 pan with non stick spray.
Arrange 6 of the english muffins, (12 haves) and put them in the bottom of the the pan. Top with half of the sausage and half of the cheese. Do another layer of the english muffins add the rest of the sausage.
In a medium bowl whisk together the 8 eggs, green pepper, and sour cream. Pour it over the english muffins so it covers all the bread. Add your cheese and and let it sit 10 minutes. Cover with foil and bake for 40 minutes until cooked through.
Just a tip - you can also make this the night before and let the eggs soak in over night. It tastes SO good!
