I know it’s only February – but I am already getting the itch for spring! As we’ve been trying to eat healthier, salads are now my go-to option for lunch. I know, I know – who am I?! I used to hate eating “rabbit food”, but honestly – with the fresh fruit + yogurt dressing – this tastes more like a sweet treat! It’s really simple to throw together, and all the ingredients are FRESH! It’s my low-cal version of Zupas’ Mangoberry and I have to say – I LOVE how it turned out!
