Do you have leftover bananas? Then this is the perfect recipe for you! I threw it together in a matter of minutes and my kids were thrilled to have hot muffins for breakfast!

Ingredients
  • 4 medium sized, ripe bananas
  • 1 yellow or white Cake Mix
Instructions
  1. Preheat your oven to 350 degrees.
  2. Mash your bananas in a bowl. Add your box of cake mix and stir very well (do not follow the instructions on the box). After about a minute or so, it will start to turn to dough.
  3. Place muffin liners in a muffin tin, then spray the inside of them with non stick spray.
  4. Bake 15 to 17 minutes or until it is cooked through.

    Was skeptical…I have to admit. But these ARE SO yummy, I know will be making over and over again. Next time might experiment with chocolate cake mix. I got a dozen and a half of regular-size cupcakes. Might add a pinch of salt the next time. Thanks ladies!

    I made these last night… amazing.
    I used organic cake mix (my son cant eat the ingredients in other box food)
    im also going to try gluten free cake mix :)
    another flavor to try, frozen zucchini from the garden for zucchini bread that I also used. I squeezed out the extra water in it and made zucchini breads. amazing. very easy kid friendly recipe. thank you

    I used gluten free cake mix, and they were yummy! I did have to cook them a few minutes longer than suggested. Such a quick and easy recipe. I easily whipped these up for the kids’ breakfast today, before they headed off to school.
