I love fajitas in any form! Some of my favorite recipes are our Baked Chicken Fajitas and our Slow Cooker Creamy Chicken Fajita Soup. They are both amazing! Rather than going out to eat, I gathered a few things from my pantry and this recipe was born!
Tangy Chicken Fajitas Recipe:
(makes 6 servings)
1/4 cup white distilled vinegar
1/2 cup lime juice
2 (0.7 ounce) dry Italian-style salad dressing mix
3 boneless, skinless chicken breasts, cubed or cut into strips
1 onion, thinly sliced
1 green pepper, thinly sliced
1/2 cup olive oil
Sour cream, optional
In a large bowl, whisk together vinegar, lime juice and salad dressing mix. Add chicken, onion and green pepper. Cover and refrigerate for at least 3 hours. After chicken and vegetables have marinated, heat oil in a skillet over medium heat and saute until vegetables are soft and chicken is cooked through. Serve in tortillas with your favorite toppings.
