I’m going to be honest, sometimes I just get sick of eating the same old veggies all of the time. My goal is to eat 3 vegetables everyday. That can get tricky sometimes. This vegetable stir fry is so easy to make, you eat a ton of veggies, and it tastes delicious!
1 Red pepper, chopped
1 Green pepper, chopped
1 Onion, chopped
1 Red onion, chopped
1 Bunch of broccoli, chopped
1 Bunch of cauliflower, chopped
1 Zucchini, sliced
1 stalk of celery, sliced very thin
1 Tablespoon of olive oil
1 cup Panda Express Mandarin Sauce
2 cups cooked shredded chicken
You don’t need all of these veggies for your stir fry. These are just the ones I used.
Turn your stove to medium high and heat your oil in a large frying pan. Add all of the veggies that you are using. Mix them so the oil covers the majority of them.
Cook them for about 5 to 10 minutes, or until all veggies are soft.
Once they are cooked, put them on a plate and top with shredded cooked chicken. Pour a little Mandarin Sauce over the top. Serve hot.
Too many veggies for you? After you have chopped all of your veggies, split them into 4 different piles and put each pile in a freezer bag. Stick 3 bags in the freezer and use one of the piles for the recipe.
