After the release of our first cookbook last year, many of you requested that we share some ideas for side dishes or complete menu plans. Like many of you, I struggle to come up with side dishes or appetizers, so our focus was to take out the hard work. Like most of our recipes, they are simple family-friendly menus that even your pickiest eaters will eat (trust us- between the sisters, we have 8 kids and some of them are as picky as they come!).
We are so excited for this book and can’t wait to share with you some of our favorite recipes!
This recipe isn’t included in the book, but it’s definitely cookbook worthy! My kids love ham, but I struggle thinking of different ways to prepare it. I love the ham and pineapple combination, so I decided to throw it in the crock pot and see what happens. The ham+pineapple+brown sugar makes the most amazing flavor. Even my two youngest children (ages 1 and 4) ate their dinner, so you know it’s a winner!
Slow Cooker Ham and Pineapple Sandwiches
2 lbs ham, fully cooked and cut into small pieces
1 (20 oz) can crushed pineapple
3/4 cup brown sugar
1 medium green bell pepper, diced
1/4 cup onions, minced
1/4 cup Dijon mustard
1 tablespoon dried minced onion
Spray your slow cooker with non-stick cooking spray. Add all ingredients in the slow cooker and stir together. Cook on low heat for 3-4 hours or until completely heated through. Serve by scooping sandwich filling on a large hamburger bun (or bun of your choice). Makes about 10-12 sandwiches.
To make these even yummier, I threw some Swiss cheese on top of the ham and put them under the broiler in the oven for a minute or two (until the cheese was nice and melted). It was amazing.
Pair sandwiches with our Baked Seasoned Steak Fries for a quick and easy meal!
