A few weekends ago my family and I went to a cabin with some of our friends. We all take turns making a meal for each other. My friend make this Jamaican Jerk Chicken and it was delicious! My husband requested that I make it again. Thanks Shelley Porath for letting share it with everyone!
Jamaican Jerk Chicken with Mango Salsa
6 Boneless Skinless Chicken Breasts
2 Tablespoons of Red Onion, chopped small
2 Mangoes, chopped small
2 Tablespoons of cilantro, chopped small
2 Tablespoons of lime juice
3 cups cooked rice, brown or white works great
Season your chicken with Jerk seasoning and grill or cook on a George Foreman.
In a bowl combine the mangoes, red onion, cilantro, and lime juice. Mix Well
When the chicken is done cooking, place the salsa over the cooked rice, then put the chicken on top.
