I know what you are thinking… this soup doesn’t have a lot of ingredients, so it probably doesn’t have a lot of flavor. NOPE! It is amazing! This soup is what my Mother-in-law is known for and it is by far my husband’s favorite. It is my most favorite too!
Simple Crab Soup Recipe
2 (6 oz) cans of minced white crab meat
1 cup onion, finely diced
1 cup celery, finely diced
2 cups potatoes, finely diced
3/4 cup butter
3/4 cup flour
1 quart of half and half (for a healthier dish you can use skim milk and it will still taste delicious!)
2 teaspoons of salt
Pepper to taste
Place your your onion, celery and potatoes in a large pot.
Drain your crab meat and pour the crab meat liquid over all the veggies. Then add enough water to cover all of the vegetables. Simmer over medium heat until veggies are tender.
Melt butter in heavy saucepan.
Add flour, making a roux, and blend until smooth. Stir constantly while slowly adding half and half (or milk)
Cook and stir with wire whisk until thick and smooth.
Add your mix to the veggies and mix well. Then add your crab meat, salt and pepper.
