Chicken Salad



My kids are really liking casseroles right now,  so I found one that is a little healthier. This Chicken Salad Casserole has chicken, veggies, and almonds. It was a hit for everyone in my family! (Even my picky 3 year old ate it)

 

Hot Chicken Salad Casserole
Serves 15

Ingredients:

3 cups cooked chicken breast, cubed

2 stalks celery, sliced

1 red sweet pepper, chopped

1 cup of cheddar or mozzarella cheese, grated or shredded

1 (10 3/4 ounce) can reduced-fat and reduced-sodium condensed cream of chicken soup

1 (6 ounce) container of plain low-fat yogurt

1/2 of a yellow onion, chopped

1 tablespoon lemon juice

1/4 teaspoon black pepper

1/2 cup crushed cornflakes

1/4 cup sliced almonds

 

Directions:

Preheat oven to 400 degrees F.

In a large bowl stir together chicken, celery, pepper, cheese, soup, yogurt, onions, lemon juice, and black pepper.  Pour everything into a 9×13 baking dish that has been sprayed lightly with non stick cooking spray.

In a small bowl stir together cornflakes and almonds. Sprinkle evenly over chicken mixture.

Bake, uncovered, about 30 minutes or until heated through. Let stand for 10 minutes before serving.

      This sounds a great deal like a recipe from my childhood (LONG ago) but of course, without yogurt – we didn’t know what that was in the old days! Can’t wait to try it!

      Hi Dawn, I’m sure you could prepare this in a slow cooker. The temperatures of every crock pot vary slightly. You would need to check on the high temp of your slow cooker and then figure out how long to cook it. Low temp on a slow cooker is usually around 200 and high temp is around 300. Hope this helps. Should work just fine, be sure to watch it closely. The chicken is precooked so it mainly just need to be heated through well.
