Oh family dinner!

I always have visions of it being such a big success- we all sit around the table, enjoying each others company, talking about our day . . . but with a 6 year old, a 4 year old, and a 1 year old, it usually ends up being quite the opposite.


Anyone else feel this way? Ha ha!

A couple of Saturdays ago, we had had a busy day doing work around the house and running errands. I was tired and the kids were ornery . . . and I wasn't looking forward to a crazy dinner. I threw this recipe together using leftover chicken and BAM! It was like magic! All three kids loved it and there was no complaining from any of them (which is a very rare thing from our house!). Dinner was actually peaceful and enjoyable . . . I am going to chalk it up to this easy and delicious recipe.
  • 1 package (16 oz) bow tie pasta
  • 3 cups cooked chicken, shredded or cut into bite-sized pieces( I used a rotisserie chicken)
  • 1 red bell pepper, diced
  • 1 tablespoon olive oil
  • 2 cans (10.75 each) cream of chicken soup
  • 1 (10 oz) bag frozen peas
  • 1½ cups milk
  • 1 teaspoon garlic powder
  • ½ teaspoon salt (more or less to taste)
  • ¼ teaspoon pepper
  • ⅔ cup grated Parmesan cheese
  • ½ cup cheddar cheese
  1. Cook pasta according to directions on package.
  2. In a large pot, heat olive oil over medium heat.
  3. Add red peppers and saute for a couple of minutes (until tender).
  4. Add in the soup, peas, milk, garlic powder, salt and pepper to the pot and bring to a boil.
  5. Reduce heat and simmer, uncovered, for 1-2 minutes or until heated through.
  6. Stir in cheese.
  7. Drain pasta; add to chicken mixture and toss to coat.

    That looks really good, I will have to try it. I completely understand what you mean about family dinners, we sit down and right away someone wants something. I try to make sure we have everything, but there seems to always be something we forget.
