My husband was gone from September to December for his audition rotations for Medical School. My girls and I are SO HAPPY to have him back. While he was gone, I decided that we needed to do more things as a family. So now every Saturday we are going to make breakfast together. This last Saturday we had this Coconut Crusted French Toast and it was DELICIOUS!
Coconut Crusted French Toast
6 1-inch thick slices of French Bread
5 large eggs
1/2 teaspoon of vanilla
1 teaspoon of sugar
1/4 cup of skim milk
1 1/2 cups of sweetened coconut, shredded
Cream Cheese Filling:
4 oz cream cheese, softened
3 Tablespoons of Sugar
3 Tablespoons of sweetened coconut flakes
Preheat your griddle to 300 degrees (or medium heat).
Slice the 6 French bread slices in the middle. Don't slice it all the through because you want your french toast to stay together.
In a small bowl, mix the cream cheese, sugar, and 3 Tablespoons of coconut.
Place 1 1/2 cups of coconut flakes in a wide bowl.
In another bowl (best if it is shallow and wide) whisk your eggs, vanilla, milk, and sugar until smooth.
Spread the cream cheese mixture in the middle of the bread slices.
Dip the bread in the egg mixture and then into the 1 1/2 cups shredded coconut. Press the coconut lightly.
Cook the French toast on medium heat for about 3-5 minutes on each side.
