My husband was gone from September to December for his audition rotations for Medical School. My girls and I are SO HAPPY to have him back. While he was gone, I decided that we needed to do more things as a family. So now every Saturday we are going to make breakfast together. This last Saturday we had this Coconut Crusted French Toast and it was DELICIOUS!

Coconut Crusted French Toast

Ingredients:

6 1-inch thick slices of French Bread
5 large eggs
1/2 teaspoon of vanilla
1 teaspoon of sugar
1/4 cup of skim milk
1 1/2 cups of sweetened coconut, shredded

Cream Cheese Filling:

4 oz cream cheese, softened
3 Tablespoons of Sugar
3 Tablespoons of sweetened coconut flakes

 Directions:

Preheat your griddle to 300 degrees (or medium heat).

Slice the 6 French bread slices in the middle. Don't slice it all the through because you want your french toast to stay together.

In a small bowl, mix the cream cheese, sugar, and 3 Tablespoons of coconut.

Place 1 1/2 cups of coconut flakes in a wide bowl.

In another bowl (best if it is shallow and wide) whisk your eggs,  vanilla, milk, and sugar until smooth.

Spread the cream cheese mixture in the middle of the bread slices.

Dip the bread in the egg mixture and then into the 1 1/2 cups shredded coconut. Press the coconut lightly.

Cook the French toast on medium heat for about 3-5 minutes on each side.

To make this recipe I used a Griddle (found HERE), a pie pan for my shallow bowl (found HERE), and a glass mixing bowl for the coconut, (found HERE

I am so sorry to contact you here…but I am not sure of another way to reach you. I purchased the audio for last year’s Build Your Blog conference on December 14th. I finally got the password on December 22nd but have sent a couple of emails telling you that it’s not working and just going back to the screen to pay for the audio. Please help! I am so anxious to get started listening.

Im making this tonight, my husband loves coconut, I don’t like it so I don’t know what Im eating! :) So in the recipe, you say 1/2 teaspoon vanilla in the ingrediants, but in the instructions, you say 1/2 tablespoon. I was wondering which one to use, thanks, I know my husband is looking forward to this!
