I’ve never been a huge fan of vegetables, but carrots of any kind are something that I can actually swallow! These Roasted Balsamic Carrots are probably one of the easiest side dishes I have ever come across, and they taste absolutely amazing! These would be perfect on any Thanksgiving table!
1 bag of baby carrots (16oz)
1/4 cup extra virgin olive oil
2 Tablespoons balsamic vinegar
1/2 teaspoon salt
1/2 teaspoon pepper
Preheat oven to 450 degrees. Pour bag of baby carrots into an 8×8″ pan. Drizzle half of the olive oil and all of the vinegar over the carrots. Stir them around so all of the carrots are coated. Sprinkle salt and pepper over the carrots and cook for 10 minutes. After ten minutes, rotate the carrots and drizzle the remaining olive oil. Cook for 10-15 more minutes, or until the carrots start turning a little brown around the edges.
