Happy Sunday!
Growing up, Sundays were one of my favorite days of the week because we were usually all home together as a family and mom always made a HUGE and delicious dinner.  I still remember the first time that my husband Jared joined my family for Sunday dinner. For the most part, our family has great manners and we know when to be polite. However, we do have one weird family tradition . . . we have the Sunday dinner roll toss. :)

Instead of calmly passing the rolls around the dinner table, my mom pulls them out of the oven and each of us have to "catch" our roll when she tosses it to you. I really have no idea how or why this even started, but it's just one of those quirky family dinner things that we do. My poor husband was so caught off-guard by our weirdness that he wasn't quite sure how to react! Ha ha! Now, 9 years later, he is one of the best roll catchers around!

Even though it was such a weird thing, it makes me look back at memories of dinner with my family and remembering how much fun we have together. Now that I have my own kids, I hope that I can make some fun and silly memories with them that they will remember. We don't have a roll toss at our house (I can see my kids wanting to throw and catch all their food), but we play funny little games and ask silly questions to keep dinner time a happy time.

If you are looking for a quick and easy dinner, look no further. These sandwiches are perfect for hot summer days because you don't even have to turn your oven on. My family absolutely loved them (in fact, I was editing the picture today and my husband glanced over my shoulder and said, "Oooo . . . I loved those! We should have them again!").

Buffalo Chicken Salad Sandwiches
Ingredients:
2 cups chicken, cooked and shredded (I used a rotisserie chicken)
1/2 cup ranch dressing
1/4 cup hot buffalo wing sauce (I like Frank's RedHot sauce)
4 oz cream cheese, softened
2 celery stalks, finely diced
1/4 cup onion, finely diced
1/4 teaspoon garlic powder
salt and pepper to taste
buns

Directions:
In a large bowl, mix together chicken, ranch dressing, buffalo sauce, cream cheese, celery, onion and garlic powder. Add salt and pepper as needed. Serve on buns and top with your favorite sandwich fixings (such as tomatoes, cheese, lettuce, pickles, etc).
Store leftovers (if you have any!) in a covered container in the fridge.
Serves 4-6.

      We ususally grab them at our local grocery store. Wal Mart has some delicious rolls over in their bakery.

      This is a cold buffalo chicken salad sandwich. But you could cook your chicken any way you would like. We just bought ours pre-cooked at the store to save time.

    Would it still work if I didn’t put in the cream cheese? My guys won’t eat anything savory with cream cheese (but I make a cheesecake and it gets crazy!).

      I would say leave the cream cheese in and just don’t tell them. It doesn’t taste like cream cheese once mixed in; simply adds to the creaminess. If you just can’t do it, maybe you could whip some whipping cream and season that with salt and pepper (which is what I do in a different chicken salad recipe).

    I just made these…and they are SO good! I also used the store bought rotisserie chicken….but used blue cheese dressing, Hawaiian rolls….and everything else the same. Perfect…and I bet they will be even better tomorrow! Thanks for all your great recipes!

    I made these tonight and they were delicious! For us they were a little too spicy (kids-11,9 and 8) next time I will reduce the wing sauce by half and then taste and add as needed. I’m definitely making this frequently this summer.

    Made these last weekend and they were wonderful!!! I’m curious though, did you mean 2 celery sticks? I guess two stalks just seems like so much to me. I was worried these were going to be too spicy for my kids since another reviewer said they were a bit spicy to her. To my surprise I actually think I’m going to add more buffalo sauce next time, I couldn’t taste it as much as I would’ve liked. All in all, these are going into my recipe book, my husband couldn’t stop saying how much he loved them. Thanks for the tip to use a rotisserie chicken, made it so much more convenient! Every recipe I’ve tried from you gals has been a keeper!

    Way to much ranch dressing. Followed the recipe exactly and i wish I would have mix the dry ingredients first then added the hot sauce and ranch to taste. Ate one sandwich but threw out the other one, Yuk!

    I halved the ranch, substituted chives for onions because I needed to use them up, and toasted almonds for celery because I am not a huge fan of celery. It turned out really well! I think I would have preferred bleu cheese dressing, though.
