And I just have to show you this picture.... I LOVE it! My little girl is now 3 months old!
Southwest Slow Cooker Pork Sandwich
Ingredients:
2 lbs of boneless pork pot roast
3/4 white chopped onion
1 cup of beef broth
6 Bakery Cibatta Rolls
3/4 cup fat free re-fried beans
1/2 packet of mild taco seasoning
1 cup of shredded cheddar cheese
1/4 white onion, thinly sliced
2 avocados, sliced
Dijon Mustard
Directions:
Place your pork roast and chopped onion in a large crock pot. Add beef broth and cook on low for 6 to 8 hours.
Once cooked, shred the pork with two forks. Leave the pork in the crock-pot until ready to use.
Mix the re-fried beans and the taco seasoning together and spread on the bottom part of the the bun.
Next add your pork, cheese, onion, and avocado.
On the other half of the bun add your Dijon mustard. Place the bottom bun and top bun facing up on a cookie sheet. Broil them for about 2 minutes or until the cheese is melted and the buns are toasted.
Then put the sandwich together and ENJOY!!!!

i love pulled pork, but have never thought about making it a southwest version/sandwich. avocado especially sounds like it would be amazing with it! i can't wait to try this!
