I seriously have no idea why I have never heard of these before!!
I am all about simple recipes with few ingredients and these fall perfectly in that category. I whipped them up in about 20 minutes and they were a huge hit! My kids also helped me make them from start to finish, so if you need a fun project with your kids, this is for you!
O'Henry Chocolate Oatmeal Bars
Ingredients:

4 cups quick oats
1 cup butter, softened
1 cup brown sugar
1/2 cup white sugar
1 cup milk chocolate chips
1 cup smooth peanut butter

Directions:
Spray a 9x13" pan with non-stick cooking spray. In a large bowl, mix together quick oats, butter and sugars and press flat in pan. Bake at 350 degrees for 14-15 minutes.
In another bowl, melt chocolate chips and peanut butter together in the microwave (you can also do this on a stove top). Spread evenly over crust. Let set in refrigerator.

Would it be weird to use semisweet chocolate chips? I never buy milk chocolate ones and I can’t imagine that you can ever go wrong with semisweet. Heck, I think I’ll try it anyway.

I just made these & of course I had to taste them before they were hardened up (you know, to make sure they were safe for the rest of the fam – LOL). They are awesome!
