Churro Waffles

As I have mentioned before, I am not much of a “hot breakfast” kind of girl . . . I just love my bowl of cold cereal each morning. However, I made these for my kids last weekend and they may have changed the way that I think about breakfast! These are so delicious and just melt in your mouth.
In a large bowl, mix together flour, salt, baking powder and 2 Tablespoons sugar; set aside. Preheat waffle iron to desired temperature.
In a separate bowl, beat the eggs. Stir in the milk, 1/3 cup butter and vanilla. Pour the milk mixture into the flour mixture; beat until blended.
Ladle the batter into a preheated waffle iron. Cook the waffles until golden and crisp.
Mix together the 3/4 cup sugar and 3-4 tablespoons cinnamon in a shallow bowl or dish. Place the melted butter into aanother shallow bowl or dish and dip the hot waffle first in the butter, then in the cinnamon sugar mixture. Be sure to coat both sides of the waffle with butter and cinnamon/sugar.
Serve immediately.
Makes 10-12 4″ waffles.

As the connoisseur of waffles in my family… this one made a home run… I mean hit way out of the ballpark! Sisters, you totally killed this one. My only frustration is how soon can I make these. I’d do it tonight, except it’s after midnight and cooking anything after midnight can be a bit scary!My suggestion… serve it for lunch on Saturday. Or, if that’s reaching… pick a winner. I promise I’ll buy all the raffle tickets!No, seriously, you guys did good on this post!

I just had the most amazing choros the other night at the mexican restaurant I went to. After our meal they brought them out and I thought I was going to die I was so full. What made them over the top?? They put honey on them! I’ve never had them with honey drizzled on top and they made so amazing. Thanks for sharing, I love this idea
