Broccoli Salad
Ingredients:
1 pound fresh broccoli (about 2 bunches) cut into small florets
1 medium red onion
1 cup grated cheese
8 strips of bacon (cooked crisp and crumbled)
1/2 cup sunflower seeds
3/4 cup craisins
Directions:
In a large bowl combine broccoli, onion, and grated cheese. Then add in bacon pieces, sunflower seeds, and craisins. Put in refrigerator while making the salad dressing below.
Broccoli Salad Dressing:
Ingredients:
1 cup light mayonnaise
2 Tablespoons red wine vinegar
1/2 cup sugar
1/2 teaspoon salt
Directions:
Mix well to dissolve sugar. Chill dressing for at least one hour before tossing with the salad. (You don’t need to wait one hour, but the flavors combine better if you do.) Then pour dressing over broccoli salad and stir to coat.
Makes 6 servings

I am making this today, with Craisins, and toasted pine nuts as I do not have sunflower seeds. I uses a couple tablespoons of Splenda rather than the sugar. I di not have as much broccoli either, so just a small side salad for my husband and I with grilled pork chops.I saw another recipe that added frozen peas, so may add a half cup of those to extend the recipe. My 6″7″ husband has a pretty big appetite! Love your recipes.
