This is an easy recipe that is perfect for those days when you don't have a lot of time to prepare dinner. Most of the ingredients you even have on hand! This is a healthy dinner recipe you will want to be sure to keep in your rotation!
Spinach and Feta Pasta Recipe:
8 ounces (1/2 a box) Penne pasta
1 Tablespoon olive oil
1 (28 ounce) can diced tomatoes
3 cups fresh baby spinach
1 onion, finely chopped
5 cloves minced garlic
1 cup sliced fresh mushrooms
4 ounces feta cheese, crumbled
Salt and pepper, to taste
Cook pasta according to package directions. While pasta is cooking, heat olive oil in a skillet over medium heat. Add onion, garlic and mushrooms and cook until tender. Add spinach and cook until wilted. Add tomatoes until heated through. Add drained pasta and feta. Add salt and pepper to taste. Warm all the way through and serve.
