Diet Lemon Raspberry Cake Recipe

I have always been a big cake lover.  I wanted to have my cake and eat it too, all while saving a few calories!

Diet Lemon Raspberry Cake Recipe:
(Makes 18 servings)
Ingredients:
1 (15.25 ounce) box lemon cake mix
2 egg whites
1 1/4 cup Sprite Zero or Diet 7UP
1 cup fresh raspberries (plus more for garnish)
Directions:
Preheat oven to 350 degrees.  In a large mixing bowl, combine cake mix, egg whites and diet soda.  Fold in raspberries.  Pour batter into a greased 9×13 inch baking pan.  Bake for 30 minutes.  Top with light Cool Whip and garnish with raspberries.

    This looks so good I couldn’t wait to try it. So I just put it in the oven. I made a few adjustments – using egg white powder instead of eggs because I just can’t stand to waste yolks, using FD Raspberries and regular 7Up, not diet. Will be sharing on my blog next week. It’s for dinner with friends tomorrow so I have to wait to taste it :(
