Chicken Taco Casserole

What a weekend!
Our sweet sister Kristen was in a terrible car accident with her family last Thursday night. Here in Utah, we have had freezing rain, which immediately turns to ice as soon as it hits the ground. All our freeways have become ice skating rinks and it makes driving so scary.
Kristen and her family were headed to visit us on Thursday night and a semi-truck came out of his lane, causing them to swerve to miss hitting him, which send them spinning into the side of the semi-truck.
Their car was totaled and they had to rip off the door of the car to pull Kristen out. Her arm is in a sling because she hurt her elbow, but other than that, they are okay. When you see pictures of the car, it really is a miracle that she is okay.
Yep . . . Kristen was sitting right where the windshield is bashed in . . .
Anyway, we have once again been reminded of the importance of families. You can bet your last dollar that I held my family a little tighter that night and didn’t hurry through our bedtime story . . . you just never know.
One thing that has always been a focus in our family (both growing up and right now) is family dinner. It’s a priority in my life to be able to sit down with my family every night and enjoy a meal together. I love catching up on the day and being with my family.
This Chicken Taco Casserole is actually something we make all the time because the whole family loves it. If you are looking for something that will make everyone at the dinner table happy, this is the recipe for you.
Chicken Taco Casserole

1 (10 oz) bag tortilla chips
2 (10.75 oz) cans cream of chicken soup (I used 98% fat free) – or use our favorite homemade cream of chicken soup recipe
1 1/2 cups sour cream (I used light)
1 (14 oz) can diced tomatoes and green chilis (Ro-tel)
1 can black beans, rinsed and drained
1 (1 oz) packet taco seasoning
3 cups chicken, cooked and shredded
2 cups cheddar cheese

Preheat oven to 350 degrees.  Lightly grease a 9×13-inch pan.
In a large bowl, combine the chicken soup, sour cream, Ro-Tel, black beans, taco seasoning and chicken. Set aside.
Crush chips (I just crush them with my hands) and spread half of them on the bottom of the pan. Spread half of the chicken mixture over the tortillas.  Top with 1 cup of cheese.  Repeat layers.
Bake for 30 minutes, until bubbly and cheese is starting to brown.

    Wow, that is sooo scary! So glad they are okay! I just made your mac and cheese in the crockpot and it is a hit! Devoured. Been here about five times this week already.     Wow! That was a scary accident. I am so glad that everyone is OK (aside from Kristen’s injured elbow). It is really amazing that there was only a minor injury with the way the car looked. I like your comment, “I held my family a little tighter that night and didn’t hurry through our bedtime story . . . you just never know.” That is so true.

    Oh my gosh, I am so glad her and her family are okay. The roads last Thursday were the iciest roads I have ever driven on here in Utah. Just from watching the news and seeing how many accidents and how many people were in the hospital from falling on the ice shows you how bad the roads were that day/night. On a happier note, your casserole sounds delicious.

    I am stationed in Okinawa with my husband and our off-base house does not have an oven nor does it have hookups for an American oven. Do you think this recipe would work if I made it in an aluminum foil pan and cooked it on medium-high heat in a covered grill for about 30 mins? Also, glad to hear your sister is okay!!!

    Oh I am so glad that they are all ok!! That is so scary. Makes you want to pray a whole lot harder and hold your family closer each and every night. So glad that nothing worse happened to them!     Prayers to you and your family. A near tragedy or miracle I should say like your sister’s accident is a reminder to all of us that you never know what will happen next and to cherish every moment you have with your loved ones.

    Also thank you for your wonderful recipe. My husband has developed a problem with gluten and I think I can tweak this recipe and make it gluten free and we will just love it!!!

    I’m also glad your sister is ok. I know that is very scary and hope she doesn’t have a lot of pain and recovers quickly. I’m gonna make this recipe today. Reminds me of King Ranch Casserole…except for the black beans. I am assuming this serves 4-6…so I may have to double it…did I miss the serving amount on recipe??

    So glad to hear that Kristen & family are OK … it could have been so much worse!
    I was rear-ended last winter by a teenage driver, my car was totalled and my lower right leg and ankle were badly fractured. I’m now the owner of a number of screws and plates … not great, BUT I’m not in a wheelchair anymore – or worse. It’s been a long recovery, I still can’t walk a long way or do some things I used to, but I’m determined to get back as far as can!!

    I made this casserole this week and would definitely make this again! SO easy and really tasty! The kiddos are super picky eaters. They hated the black beans but other than that, we got a rave review!! I like black beans so those are staying.

    I’m not spotting this Recipe in the Casserole section of the website. Maybe I’m just missing it? I have it Pinned so I just go to my board to find it.

    I made this casserole tonight, and it was AWESOME. This is an instant “Keeper” for me. I am on vacation with my 4 sisters, we take a week together every year, it’s called ‘sister week’. I made the recipe just as written, and laid out toppings like for them to put what they wanted on top like: Salsa, extra sour cream, green onions, cilantro. I think black olives would have been good too. Thank you for a delicious recipe.

    I chanced upon your recipe and had to give it a try. Although it was very tasty I was a little disappointed at the “soupy” consistency. Even after allowing my casserole to cool it did not set they way your picture suggest but it makes an awesome chip dip.

    Thank God your sister and family are ok. We had a horrible accident 35 yrs. ago. Our son was just 8. days old. We were both thrown out of our pickup. The truck landed on me and baby carrier was upside under one of the tires. On impact he slid out of the top and thrown into a snow bank. When the police finally found him he just had a tiny scratch on his forehead. I had a crushed arm and broken ribs. Three surgeries over the next year. Still have problems from that wreck and our son does not like cold weather but we were so lucky. Thankful to our Heavenly Father everyday. I will definitely try this receipe.

    First let me say I am glad your family is OK. God was definitely with them and brought them through this ordeal safely. Praise be to him. Secondly I made the Chicken Taco casserole for my two nieces last night. Oh I must say how they enjoyed it. My skeptical husband said he would find something else to eat – but….he was won over by the taste. I loved the additional of black beans in this, which made it a bit more hearty.     This recipe? I know cooking it in a crock pot all day would do it but is there any other way to do it and much faster?

    We don’t do a lot of casseroles around here but this one i’ve made twice and we are big fans. I used half light sour cream and half greek yogurt, made my own taco seasoning and before serving put some avocado slices and green onions on top. yum! Husband is a fan too which is saying something as he is one picky eater!

    Made this last night (minus the black beans) and everyone loved it! My kids are very picky eaters but my 8 year old said it was the best meal I’ve ever made and after my 4 year old initially said “yuck” he ended up eating 2 full plates! Big success!
